چکیده

Probiotics play an important role in human gut health. However, it remains a challenge to maintain the viability of probiotics throughout gastrointestinal transit. Hence, this study aimed microencapsulate Bifidobacterium lactis Bi-07 with galactooligosaccharides (GOS) using co-extrusion technique. Optimization calcium chloride (1.0% w/v 3.0% w/v) and GOS concentration 5.0% were performed encapsulation B. based on bead size microencapsulation efficiency. The found that microbead prepared 1.5% (w/v) sodium alginate, 2.0% showed highest produced was 735.69 μm efficiency more than 94%. Besides, compared between beads or without GOS. Results encapsulated had larger lower probiotic cells Furthermore, free subjected simulated treatment where cell evaluated. Encapsulated higher after treatment. viable count remained 107 CFU/mL. This optimized could survive confer health benefits potential be incorporated into functional foods.

Microencapsulation of Bifidobacterium animalis subsp. lactis and Lactobacillus acidophilus in cocoa butter using spray chilling technology

In the present study, the cells of Bifidobacterium animalis subsp. lactis (BI-01) and Lactobacillus acidophilus (LAC-04) were encapsulated in cocoa butter using spray-chilling technology. Survival assays were conducted to evaluate the resistance of the probiotics to the spray-chilling process, their resistance to the simulated gastric and intestinal fluids (SGF and SIF), and their stability dur...

Microencapsulation of Potential Probiotic Lactobacilli by Extrusion Technique

In order to provide health benefits potential probiotic strains must be viable and metabolically active in the product and maintance their activity in gastrointestinal tract (GIT). Therefore, the current investigations are based on protection of probiotics by microencapsulation to increase survival and delivery of bacterial cultures to the GIT. Several reports have shown better survival of enca...

Consumption of Bifidobacterium lactis Bi-07 by healthy elderly adults enhances phagocytic activity of monocytes and granulocytes – ERRATUM

Elderly adults have alterations in their gut microbiota and immune functions that are associated with higher susceptibility to infections and metabolic disorders. Probiotics and prebiotics, and their synbiotic combinations are food supplements that have been shown to improve both gut and immune function. The objective of this randomised, double-blind, placebo-controlled, cross-over human clinic...

Microbiology neutralization of zearalenone using Lactococcus lactis and Bifidobacterium sp.

The aim of the study was to neutralize zearalenone by lactic acid bacteria (LAB) such as Lactococcus lactis and Bifidobacterium sp. and investigate the mechanism of zearalenone (ZEA) binding. Neutralization of ZEA by LAB was confirmed by identification of binding kinetics and spectroscopic studies such as Fourier transform infrared spectroscopy (FT-IR) and matrix-assisted laser desorption/ioniz...
